chocolate banana muffin
makes 22 ½ ounce muffins

¾ cup whole wheat flour
1 cup all purpose flour
¾ cup cocoa powder
1 teaspoon baking powder
2 teaspoons baking soda
1 teaspoon salt
1 ½ cups sugar
1 ½ bananas
2 eggs
1 cup coffee (regular or decaffeinated)
1 cup nonfat milk
1 teaspoon vanilla extract

Spray a non-stick muffin pan with vegetable oil and set aside. Preheat oven to 300 degrees fahrenheit.

Sift cocoa powder, baking powder and baking soda together.

Puree the sugar, bananas and eggs.

Mix the sifted ingredients with the remaining dry ingredients.

Combine coffee, milk and vanilla extract with the banana mixture.

Add the wet and dry mixtures together.

Bake at 300 degrees for about 15-20 minutes.

Muffins are done when you push on the top of muffin and it springs back. Cool for twenty minutes.

Optional: Sprinkle with sugar.



easy angel food cake

1 ½ cups icing sugar - sifted
1 cup unbleached flour - sifted
1 ½ egg whites - slightly beaten
1 ½ tsps cream of tartar
2 tsps pure vanilla extract
¼ tsp salt
¼ tsp almond extract

Preheat oven to 375 degrees fahrenheit.

Mix icing sugar and flour in a mixing bowl; set aside.

In separate mixing bowl, beat egg whites, cream of tartar, vanilla extract, salt, and almond extract at high speed until well blended.
Gradually sprinkle in granulated sugar, 2 tablespoons at a time while beating at high speed.

Beat just until sugar is dissolved and egg whites stand in stiff peaks. Do not scrape sides of bowl during beating.

Fold in flour mixture, about 1/4 at a time, with a wooden spoon just until flour disappears.

Pour mixture in unprepared 10" tube pan.

Cut through batter to break large air bubbles with metal spoon. Bake for 35 minutes. Remove from oven and set upside-down until cooled.



devil's delight biscuits
makes 30

calories per biscuit: 29

¼ cup softened margarine
½ cup fat-free Buttermilk
1 tsp vanilla extract
2 egg whites, whipped
1 ½ cups unbleached flour
½ cup cocoa powder
2/3 cup granulated sugar
1 tsp baking soda
¼ tsp salt
2 tsps icing sugar

Preheat oven to 375 degrees fahrenheit.

Prepare baking sheets with cooking spray; set aside.

In a mixing bowl, combine margarine, buttermilk, vanilla extract, and egg whites.

In another mixing bowl, combine flour, cocoa powder, granulatef sugar, baking soda, and salt.

Mix wet ingredients with dry ingredients just until moistened.

Drop dough by tablespoonfuls, 2" apart onto prepared baking sheets.

Bake for 7 minutes. Sprinkle with icing sugar.
